Green moong dal curry is a healthy & nutritious main course recipe. This recipe is very easy & simple to prepare contains a good amount of fiber as well as proteins.
Green Moong Dal With Brinjal Curry
Course: Lunch or Dinner side dish
Cook Time: 30 minutes
Servings: 4 people
Ingredients
250gm Whole green moong dal
2tbsp Whole Masoor dal (Optional)
3 Medium size brinjals (Chopped into cubes)
1 Medium size chopped onions
2 Chopped Green Chilies
1 large size chopped tomatoes
7-8 Curry leaves
1teaspoon Cumin seeds (jeera)
1tbsp Ginger garlic paste
1tbsp Turmeric powder
1/2 tbsp Red Chilli powder
1tbsp Garam masala powder
1tbsp Coriander powder
1tbsp Cumin powder
1tbsp Kasturi methi
2 tbsp Oil
Salt to taste
Instructions For Making Whole Green Moong Dal With Brinjal Curry(With Pictures)
- Wash the Whole green moong dal and Whole masoor dal perfectly.
- Take one bowl and soak this lentils/dal for at least 4-5 hrs.
- In a pressure cooker pour 2 glass of water. Add this soaked lentils/dal with 1tbsp of salt. Allow the Pressure cook for 2 whistles on a medium flame. Allow the pressure to remove naturally.
- Take a deep hot pan and add 2 tbsp of oil. Add cumin seeds and curry leaves. Allow it to splutter.
- After spluttering, add chopped onions and green chilies. Fry till it turns in to the golden brown. Then mix ginger garlic paste. You can stir-fry this until it disappears the raw aroma.
- Cut the brinjals into pieces. Add brinjal pieces, turmeric powder, and chili powder into it. Stir-fry this mixture properly.
- Add salt according to the taste. Cover it for 3 minutes in a slow flame.
- Then add chopped tomatoes and allow it to cook for 2minute in a slow flame by covering the mixture. Now the tomatoes become mushy.
- Shift boiled lentils/dal into it. Don’t remove the boiled water from lentils/dal. Shift boiled lentils/dal into the same pan with the boiled water.
- Again Pour a ½ glass of warm water into it. Allow it to cook for 2 minutes in a slow flame by covering the mixture.
- Add Cumin powder, Coriander powder, Garam masala and Kasturi methi. Mix all these ingredients very well.
- Allow it for 1 minute in a slow flame without covering the lid. Now the gravy will appears thick.
- Serve this whole green moong dal brinjal curry with hot rice or chapati.
