Grilled Tomato Bhindi Masala

Ingredients
250gms Bhindi(Ladyfinger or Okra)
1 medium size chopped onion
2 Green chilies
1 Grilled large size Tomato
7-8 Curry leaves
1tbsp Cumin seeds (jeera)
1tbsp Ginger garlic paste
1tbsp Turmeric powder
1/2 tbsp Red Chilli powder
1tbsp Garam masala powder
1tbsp Coriander powder
1tbsp Cumin powder
Salt to test

Instructions For Making Grilled Tomato Bhindi Masala
- At first rinse the Oakra very well in water. Cut it into 2 pieces by removing the base and stalk.
- Take a pan or kadhai and heat 2 tbsp of oil. Add Oakra into it. Fry till it gets roasted. After Oakra gets roasted, keep it in some container.
- Take 1tbsp of oil in the same pan. Grilled properly into two sides of the tomato. Then peel off the tomato. Make a smooth paste of tomato by pressing your hand.
- Here I am using grilled tomato because it will give tandoor flavors in bhindi masala.
- Take the same hot pan and add 1tbsp oil. Add cumin seeds and curry leaves. Allow it to splutter.
- After spluttering add onions and green chilies and. Fry till it turns into translucent. Then mix ginger garlic paste. You can stir-fry this until it disappears the raw aroma.
- Add turmeric powder, chili powder, and roasted bhindi into it. Stir-fry this mixture.
- Add salt according to the taste. Cover it for 2 minutes in a slow flame.
- Then Mix the smashed tomato paste into this and allow it to cook for 2minute in a slow flame by covering the mixture.
- Now add Cumin powder, Coriander powder, Garam masala and mix all these ingredients properly. Allow it to 1 minute in a slow flame without covering the lid.
- Then serve it with hot rice or chapatti.
